Mostly Raw, Plant-Based, Gluten-Free, Dairy-Free Granola!!

I’m so excited to share this quick and easy recipe. Per usual, it was a happy accident created in my kitchen using what I happened to have on hand. There are so many variations you can do to change this up and make your own customized granola, but the most important thing to know is how EASY it truly is!! I hope you try it. 🙂

Raw Granola

I was strolling the bulk section of Wholefoods when some of the various trail-mixes caught my eye. They were super expensive (in my opinion!) and each one seemed to have something I didn’t like or want in my mix — so I was inspired to make my own! I knew I had the majority of my ingredients at home so I just needed a few items, which ended up costing about $10.

Here’s the recipe.

Gluten-Free, Mostly Raw, Vegan Granola
Recipe yields about 10 snack size ziploc bags

Ingredients
2 cups gluten-free oats (I use Bob’s Red Mill)
2 cups coconut flakes
1 cup sunflower seeds
1 cup pumpkin seeds
1 cup almonds (I chopped mine in half but you could purchase sliced to save time)
1 cup goji berries
1 cup mulberries
1 cup cacao nibs (or treat yourself by trying Enjoy Life chocolate mini chips!)
1/4 cup raw, local organic honey
1/4 cup organic virgin coconut oil (my favorite is Nutiva)

Directions
1) Place all the dry ingredients in a large mixing bowl and toss to combine.
2) Slowly add in the honey and coconut oil by folding into the mixture.
3) Dehydrator option: Dehydrate granola at 115 degrees for 8-10 hours.
4) Oven option: Spread the granola onto a parchment lined baking sheet. Bake at 325 for about 25 minutes, or less (I didn’t try this option so just make sure it doesn’t burn!).

I dehydrated my batch and filled about four of my Excalibur trays . It came out absolutely perfect even though I forgot to add chia seeds. 😉

As a finishing touch I sprinkled Sol Raiz Organics Maca over each tray (about 1 tablespoon total) while it cooled. I filled about 10 snack-sized ziploc bags and stored in my fridge. The freezer could be an option, too, if you make a larger batch — OR you could share with friends to encourage healthier eating habits!

This is such a great energy boosting snack to have on hand (in your purse, in your car, at your desk etc.). It has saved me many times already when my day gets too busy. It’s also perfect to eat as a breakfast cereal, or added to chia pudding, overnight oats, or any other easy breakfast item.
